Ingredientes
(English) 1 large eggplant
1 ½ tablespoon of tahini
4 cloves garlic, crushed
Juice of 1 lemon
1 teaspoon of pink salt
Black pepper to taste
½ tablespoon parsley
Instruções
(English) Preheat the oven to 250oC. Put a high rack and a low rack.
Make a shallow cut over the eggplant.
Place the eggplant on a tray and bake in the preheated oven on the low rack until it is completely wrinkled and soft, about 40 minutes.
Move to the high rack and bake until the bark is well burned, around 10 more minutes. Wait for it to cool down.
Peel the eggplant and place the inside in a bowl. Add the tahini, garlic, lemon, salt and pepper and mix well. Garnish with parsley and olive oil.
