Vegan Christmas Recipe

In this video of the series “Vegan Christmas”, we are going to make a paste of spinach with cucumber.

Super easy and great entry option:

  • 150g of spinach,
  • 350g of tofu,
  • 1 chopped chives,
  • 1 lemon juice,
  • Salt to taste,
  • ½ tablespoon fresh dill,
  • Pepper to taste,
  • 1 cup finely chopped cucumber.

This recipe is super simple, the only equipment you will need is a processor.

First, we’ll process the spinach.

One very important thing is the cucumber, you cut it like that, very thin, very small.

Then you spread it on two or three sheets of paper towel, cover it with two or three more sheets of paper towels, and put a board or something heavy on top to get out the water.

Now I’ll mix all the other ingredients here.

Add tofu, chives, juice of 1 lemon, fresh dill, a little bit of black pepper and a little bit of pink Himalayan salt.

Close it and process a little more.

Sometimes it’s good to take a break, get a spatula and go over the edges.

To help mix better.

Then we will pick up the cucumber, turn in the salad bowl that we will use.

You can turn half, then turn, mix on top, then put the rest of the cucumber and mix a little.

And the cucumber paste with spinach is ready to serve, super easy and a great option in this heat because it is super refreshing.
