RECEITA: Risoto de Cogumelo com Espinafre – Natal Vegano

(English) 2 very small chopped purple onions
4 garlic cloves chopped very small
3 cups shitake coarsely chopped
2 tablespoons thyme
1 tablespoon of pink salt
1 ½ cup white wine
2 cups of arboreal rice
5 cups vegetable stock
2 cups spinach
(English) Sauté garlic and onion in a little vegetable broth or olive oil for about 7 minutes.
Add the mushroom, thyme and salt and cook until the mushroom is tender.
Add the white wine and stir.
Add the rice and a cup of vegetable broth and stir.
Continue stirring and adding the vegetable stock one cup at a time.
Add the spinach and stir.
